Ingredients:
8 oz rotini pasta
1 lb ground beef
1 packet taco seasoning
1 cup ranch dressing
1/2 cup sour cream
1 cup shredded cheddar cheese
1/2 cup diced tomatoes
1/4 cup sliced black olives
1/4 cup chopped green onions
1/2 cup crushed tortilla chips
Salt and pepper to taste
Directions:
Cook the Pasta:
Cook the rotini pasta according to the package instructions. Drain and rinse with cold water to cool the pasta. Set aside.
Prepare the Beef:
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add the taco seasoning to the beef along with 1/4 cup of water. Cook for another 2-3 minutes, stirring frequently, until the seasoning is well incorporated. Remove from heat and allow to cool slightly.
Assemble the Salad:
In a large bowl, combine the cooked pasta, seasoned beef, ranch dressing, sour cream, shredded cheddar cheese, diced tomatoes, black olives, and green onions. Stir until all ingredients are well mixed.
Add the Finishing Touches:
Just before serving, top the pasta salad with crushed tortilla chips for a crunchy finish. Add salt and pepper to taste.
Chill and Serve:
Refrigerate the salad for at least 30 minutes to allow the flavors to meld together. Serve cold.
