Instructions
Preheat the oven: Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish or line it with parchment paper.
Blend the wet ingredients: In a blender or food processor, combine the cottage cheese, eggs, vanilla extract, and honey (or maple syrup). Blend until smooth and creamy.
Mix the dry ingredients: In a large bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
Combine wet and dry ingredients: Pour the blended cottage cheese mixture into the bowl with the dry ingredients. Stir until well combined. Gently fold in the blueberries.
Transfer to the baking dish: Pour the mixture into the prepared baking dish. Spread it evenly and sprinkle a few extra blueberries on top if desired.
Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the center is set. A toothpick inserted into the center should come out clean.
